Peanut Butter Trail Mix Energy Bites
This recipe is from our 30 Day Prenatal Meal Plan, "A Modern Mama's Guide to Healthy Eating During Pregnancy." These energy bites are a great quick, go-to snack during pregnancy (eat one or two first thing in the morning to help ward off morning sickness) and also a great postpartum snack for nursing mamas!

Instructions
  1. Combine oats, peanut butter, honey and vanilla extract in food processor. Pulse until well combined. Pour mixture into a large mixing bowl.
  2. Add chia seeds, chopped dried fruit, pumpkin seeds, and water to mixture in bowl and stir together, making sure seeds and fruit are evenly distributed through mixture.
  3. Roll mixture into small, bite-sized balls then roll them in the unsweetened shredded coconut to coat. (optional)
  4. Store energy bites in an airtight container in the refrigerator until ready to eat. You can also freeze them for later enjoyment.
